Mama's Divinity Recipe

Mary Lea's Divinity

2 1/2 cups sugar
1/2 cup white syrup
1/2 cup warm water
2 egg whites, beaten
pecans (optional - although Mama didn't think it was divinity without them)

Mix well sugar, syrup and water. Cook slowly. DO NOT STIR. Cook till foamy, to the soft ball stage.

Pour cooked mixture into egg whites, beating all the time. Continue stirring by hand until it begins to "fudge" then add nuts to taste. Drop by spoonfuls onto waxed paper.
